These kinder cookies are made with mini kinder chocolate chopped up so you get little chunks of kinder throughout the cookies, along with half larger creamy kinder on top. These cookies are solid all round and as the cookies bake and cool the kinder on top will still be melted and gooey.
Ingredients
125g butter, room temperature
85g soft light brown sugar
85g caster sugar
1 egg
1tsp vanilla essence
300g plain flour, sifted
1 1/2 tsp baking powder
1/2 tsp bicarbonate of soda
200g kinder chocolate, roughly chopped
4 large kinder bueno bars
Method
- In a large bowl, beat the butter along with the two different types of sugars, together until light and creamy.
- Add the egg, vanilla and give a quick beat.
- Sieve in the flour, baking powder and bicarbonate of soda and beat until no flour remains.
- Fold through the chopped kinder chocolate and divide the mixture into 8 even sized balls.
- Chill in the fridge for about 2 hours or in the freezer for 1 hour.
- Preheat the oven to 180 degrees. Line your baking trays with parchment paper and place 4 balls of cookie dough on each tray. These cookies won’t spread out too much.
- Bake for 12 – 15 minutes until the cookies are golden brown colour all over.
