With a few Easter treats you can create really yummy treats. Here i just made a small batch vanilla cupcakes with some green buttercream icing, a malteser bunny and a few mini eggs to complete this little festive treat. To create the grass effect, i placed the icing in the piping bag and on one side i poked numerous holes with a cocktail stick. Start your piping process from the edge working your way into the centre, creating a tiny dome on top for you bunny to sit comfortably without falling. Scatter 3 mini eggs in and around the cupcake to finish this simple design.
Don’t forget to leave your cupcakes to cool completely otherwise your icing and topping will slide off gradually, creating a watery buttercream mess!
Ingredients
75g butter softened
75g caster sugar
1 egg room temperature
1 tsp vanilla essence
75g self – raising flour sifted
Buttercream Icing
2oz butter softened
4oz icing sugar sifted
1 – 1 1/2 tbsp water ( more if necessary )
green food paste
Method – Cupcakes
- Preheat the oven to 160 fan and line your cupcake tray.
- Beat the butter and sugar together until pale, light and fluffy.
- Beat in your egg and vanilla and beat again.
- Finely fold in your flour and using an ice – cream scoop, scoop your cupcake batter into the tray and bake for 14 – 18 minutes or until a skewer inserted into the centre comes out clean. Leave to cool completely before decorating.
Icing
- Beat the butter and sugar together until softened. Gradually add the water and beat again. Add enough green food paste to your liking.
- Place the icing into a piping bag – no nozzle needed. On one side of the piping bag poke 10 – 12 holes using a cocktail stick.
- Pipe form the outside, working you way in towards the centre, creating a tiny mound of icing to secure your easter bunny. Scatter a few mini eggs around the easter bunny to finish!
